Named after the town Millau appeal lies in the wine region of Southwest France (in some sources Languedoc called). The former VDQS area was classified in 2012 as an AOP. The conquest of the Protestant stronghold Compeyre by the troops of Cardinal Richelieu (1585-1642) in 1633 led to a decline of viticulture. After successfully rebuilding the stocks of the phylloxera disaster were again greatly reduced. The vineyards now comprise 60 hectares of vines in 17 municipalities of the department of Aveyron. They extend in a narrow valley of the Tarn River in southern slopes 80 kilometers to the west. Rosé and red wines are blended from Gamay and / or Syrah (at least 30%), Fer, Duras, and a maximum of 20% Cabernet Sauvignon, Fer Servadou and Duras. The white wine is vinified from Chenin Blanc and Mauzac. Well-known producers are Domaine du Vieux Noyer and Peysier.
