The 1985 appeal is classified in the western region of France Languedoc north of the AC Corbières . It is named after the town of Minerve, which was in the Middle Ages one of the Cathar strongholds. Here in 1210 a total of 400 members of this Christian sect were burned. It is one of the oldest wine regions of France, as the Romans put here already 125 in BC vineyards. The Roman politician Cicero (106-43 BC) tells of a transport of wine "Pagus Minerbensis" to Rome. The vineyards cover nearly 4600 hectares of vines in the departments Aude (45 municipalities) and Hérault (16 municipalities). Unofficially, it is the sub-zones in L'Argent Double, Clamoux La, La Clause, structured Côtes Noires, Les Petit Causse and Serres.
To 95% red wines are produced, which are blended from Carignan (max. 40%), Grenache, Lladoner Pelut, Mourvedre and Syrah (collectively at least 60%) and Cinsault, Picpoul Noir, Terret Noir and Noir Aspiran. In addition, rose more than 10% white varieties are allowed. The white wine accounts for only one percent of production. It is made from Grenache Blanc, Bourboulenc, Macabeo, blended Marsanne, Roussanne and Vermentino (together 80%), and Picpoul, Clairette, Terret Blanc and Muscat Blanc (max. 20%). The municipality of La Livinière (from the Latin Cellar Vinaria = cellar) was founded in 1998 with four neighboring municipalities classified as AC Minervois la Livinière only for red wines.
In the northeast there is a small AC-field, where a sweet vin doux naturel with the AC-name Muscat de Saint Jean de Minervois from mostly Muscat Blanc Muscat shares rose is made. Known producers include Château Bassanel, Château Bonhomme, Chateau Donjon, Château de Gourgazaud, Château Maris, Chateau les Ollieux, Château d'Oupia, Château les Palais Chateau Ville Rambert Julien, Chateau Ville Rambert Moureau, CV La Livinière, CV Peyriac, Domaine des Aires Upper, Domaine de Barroubio, Domaine Borie de Maurel, Domaine le Cazal, Domaine Domergue, Domaine de Mayr Anne, Domaine Montahuc, Domaine Piccinini, Domaine Prieuré Saint Martin de Laure, Domaine Sainte Eulalie, Domaine Simon, Domaine Tailhades and Domaine la Tour Boisée.
