Instead of sharp cut back in order to yield control is set to the gentle process of Triebaufwicklung. There is constant review of the vine growth to control the supply of nutrients. If necessary, a correction made by green manure, hay or apply by incorporation of compost .

The vinification by Tomoko Kuriyama is based on the principle of "controlled inaction." With the aim of possible optimal solutions for each wine and vintage are other methods used. The wines are produced in three grades. As "steep slope" designated "estate wines" are the foundation. Then follow, depending on soil type as loess, gray schist and quartz schist developed "terroir wines". Top hierarchy are the "single vineyard wines" with the name of the prime locations. The winery also produces classically flaschenvergorene sect. As a special feature can be leased vines.
