The same small town named after the appeal lies to the east of Wine Country Southwest France . Gaillac is one of the oldest vineyards in France. At least since the first Century was operated here by the Romans wine. Maybe there was previously under the Celts (Gauls), a wine. During the migration, he came to a standstill and was only in the 10th Century by the Benedictine Monastery of Saint-Michel-de-Gaillac re-established. In the 13th Century adopted the Count of Toulouse Raymond VII for its wine country, a decree for a controlled designation of origin. In the 12th Century, the wine in northern Europe, especially England, exported and enjoyed great popularity there. The poet Auger Galhard Aquitaine (1540-1593) praised long before the invention of Champagne, the sparkling wine. Until the mid-20th Century it was mainly specialized in sweet white wines, but then began to produce rosé and red wines. The hallmark is the cock of the Gaillac-city arms, so the wines used to be called "Vins du Coq".

The vineyards cover 3,500 hectares north of the city of Toulouse in the Tarn department. Because of the numerous varieties permitted, there is a wide range of different wine styles. There is a bewildering variety of names Appeals. Under the appellation Gaillac to be 75% dry reds and rosés and white wines produced. The red wine is blended from at least 60% Duras, Fer, Gamay and Syrah, as well as up to a maximum of 40% Cabernet Sauvignon, Cabernet Franc and Merlot. The Rosé has similar conditions. The white wine is made at least 15% Len de l'El and / or Sauvignon Blanc, and Mauzac, Mauzac Rosé, Semillon, Muscadelle and Ondenc. The naturally sweet white wines are marketed under the AC Gaillac Doux (the previously used this appellation Gaillac Gaillac Moelleux Liquoreux and are no longer allowed). They must have at least 70 g / l residual sugar. Under the AC Gaillac Premieres Cotes are produced mainly dry but also sweet white wines from 11 villages designated by limestone hills.

The former AC Gaillac Sec Perlé for slightly sparkling wines has been abandoned. For still wines by the method of preparation some AC's were created. A specialty is under AC Gaillac mousse Méthode Gaillacoise slightly sparkling wines produced in white and pink. These undergo only a single fermentation (see below Méthode rural ). Of this there is also a sweet version with the AC Gaillac Doux Gaillacoise Méthode mousse with at least 45 g / l residual sugar. Under the AC Gaillac mousse Méthode Deuxième fermentation sparkling wines are produced in white and pink after the champagne method. Another specialty of the "vin de voile" is (= veil veil), the manner of a Vin Jaune is generated. The name arises from the fine layer of yeast in the wine. Well-known producers are part of all the wines of Domaine Bouscaillous, Château de branes, Domaine Jean Cros, Château d'Escabes, Domaine de Labarthe, CV de Labastide-de-Levis, Montel Château, Domaine du Moulin, Domaine de Rieux, Domaine Rotier , Domaine des Terrisses and Domaine de Vayssette.
