Mont du Toit

The South African wine estate lies on the outskirts of the city Wellington (South Africa) at the foot of the mountain in the same Hawequa-Ward (Paarl District, Coastal Region). It was established in 1997 as a German-South African joint venture of Stephan du Toit, Bernd Philippi from the winery Koehler-Ruprecht (Pfalz) and Bernhard Georg Breuer (Rheingau) was founded. The total property consists of approximately 40 hectares, of which 27 hectares of vineyards planted with red varieties only. These are Cabernet Sauvignon, Merlot, Cabernet Franc, Shiraz, Alicante Bouschet, Mourvedre, Petit Verdot and Tinta Barroca. The traditional wine production is based on the philosophy of a "low tech". The reduction of green crops are harvested by hand in principle. The fermentation of the mash is done at low temperatures and can last up to 30 days, in order to deepen the color and flavor. The red wines are matured after malolactic fermentation up to 24 months in mostly French oak barrels without any further intervention.
