Refilling (also a deduction or relocation, soutirage Fr.) a young wine into another container. This is the wine of Lees (yeast deposit, Grobhefe), lees (suspended solids), as well as unresolved components of grape skin and pulp separately. The tapping is done by pumping or by gentle siphoning into an empty container. In modern Abstichtanks the suction height adjustable and can thus be flexibly adjusted to the dregs. If necessary, this is done several times. After the fermentation and subsequent Clarify is the first racking, in which the tank bottoms (Grobhefe) removed. An optionally carried out the second tapping serves to remove the Lees and optionally precipitated Weinstein . More taps can depend Vinifizierungs the process after some fine place. In the case of red wine-making by deliberately tapping a so-called open Ventilation or a contact with Oxygen effect, which contributes positively to the maturation. A tap is also often with a simultaneous filtration or Flotation .
In contrast to the tapping, the Tapping (Driving in a dispensing tap for the purpose of sampling wine) is a completely different meaning. See also Winemaking .
