The appeal lies in the French Burgundy west of Chablis . The former VDQS range Sauvignon de Saint-Bris was classified as an AOC in 2003. The vineyards cover 100 hectares in the municipalities in the department of Yonne Chitry, Irancy, Quenne, Saint-Bris-le-Vineux and Vincelottes. The white wine is pressed from the Burgundy rather unusual varieties Sauvignon Blanc and Sauvignon Gris.
