The most important grape varieties
DOC for white wine in the western region of Italy Veneto . The area includes the municipalities Cazzano di Tramigna, Colognola ai Colli, Illasi, Lavagno, Mezzane di Sotto, Montecchia di Corsara, Monteforte d'Alpone, Ronca, San Bonifacio, San Giovanni Ilarione, San Martino Buon Albergo, and the eponymous town Soave in the Province of Verona. To the east of the Soave DOC closes Gambellara with a similar wine. The name Soave is reportedly back on the Swabians, who settled here during the Middle Ages. It also means gentle or sweet and is often used to describe the character of quantitatively significant Veneto wine. Noteworthy is the winery Roberto Anselmi (45 hectares) in Monteforte d'Alpone, where decisive quality improvement were made (eg, higher vine density, a higher proportion of Garganega). It became the leading producers in Soave territory. The area with approximately 6,500 hectares located to the east of Verona in the alluvial plain of the Adige.
The Classico area of 1,500 hectares is located on the often steep southern and southwestern slopes between the towns of Soave and Monteforte d'Alpone at an altitude between 100 to 350 meters. Wines from this part may result in the additional designation "Classico" on the label. The best locations are Castelcerino, Colombara, Costalta, Costeggiola, La Fitta, Carbonare Monte, Monte Castellaro Cercene Monte, Monte Foscarino, Frosca Monte, Monte Grande, Monte Rocchetta and Zoppega. This may also appear on the label in the form of, for example "chapter Foscarino". The dry wine is made from Garganega (at least 70%), in any use of Chardonnay, Pinot Bianco and Trebbiano di Soave blended (30%), and other local varieties (up to 5%). The sparkling wine is produced in versions Brut, Dry, Extra Brut and Extra Dry.
In 2001, Soave and Soave Superiore Classico Superiore were classified as DOCG. The minimum alcohol content is 12%, the Reserve 12.5% vol. You must be at least six months, Riservas mature at least 24 months. The sweet Amarone di Soave has already received in 1998, the DOCG classification (also known as spumante).
