The most important grape varieties
My DOC for Vin Santo in the DOCG area of Chianti in Tuscany . The zone includes precisely defined areas in the provinces of Arezzo, Florence, Pisa, Pistoia, Prato and Siena. The wine is made from Trebbiano Toscano and / or Malvasia del Chianti (70-100%) and other permitted white and red varieties (up to 30%). The minimum alcohol content is 15.5% vol, vol, given a sub-zones of Chianti 16%. It is produced in two versions Secco, Abboccato, Amabile and Dolce. The wine is aged in small barrels and allowed no earlier than 1 November of the third year (for a reserve to be the fourth year) after the vintage market. The straw-yellow to deep golden yellow over amber white wine has the characteristic aroma similar to a Madeira. For at least 50% Sangiovese, the rosé version Occhio di Pernice variations in the Amabile and Dolce is generated, the minimum alcohol content is 16.5% vol, the minimum age as for the white variant, three or four years.
